Quick Caprese Toast

Sigh. I love this recipe and I love these photos but looking at them makes me a little bit sad. You see, these were the last photos taken before that fateful weekend when my camera got caught in a torrential downpour. I loved that camera. My husband knew I wanted to learn how to shoot in manual mode so he searched and researched an bought me the SONY alpha 37 for Christmas a couple years ago. It was my baby and it was special because it reminded me of the gift-giver. I bought a Canon as a replacement but I just couldn’t get into it. It didn’t feel right to me. I needed a SONY. So I returned it and ended up with this beaut: the SONY alpha 6000! With a name like that I feel like I should have bought it off an infomercial. Can’t you just hear the infomercial guy shouting SONY alpha 6000 in his infomercial voice? 

But I digress. I’m pumped about the new camera and I’m pumped about this recipe! Both my tomatoes and my basil have been growing like weeds so this toast has definitely been had a bunch recently in our house. The best part? It’s…

p.s. Any bread will do but I highly recommend the Sourdough Seed Bread for both nutrition and taste!

Quick Caprese Toast

  • sliced bread
  • garlic powder
  • thinly sliced tomatoes
  • shredded mozzarella cheese
  • fresh basil (torn)
  1. Preheat oven to 425 Fahrenheit.
  2. Arrange slices of bread in a single layer on a baking sheet.
  3. Sprinkle with garlic powder.
  4. Fill the bread slices with a single layer of tomato slices.
  5. Top with mozzarella cheese and fresh basil.
  6. Place in oven on top rack.
  7. Bake for 5 or so minutes. Watch as the cheese will go from nicely toasted to burnt fairly quickly!
  8. Remove from oven and add more fresh basil.
